At first glance,
Seville ’s cuisine may seem humble and simplistic but it is actually quite sophisticated. The most typical dishes are the famous cold soup, Gazpacho, the Flamenco-Style eggs and various stews made from meat, chickpeas and vegetables. Despite having a mixed culture population, the native dishes are still the most popular and readily available, although the Muslim influence can be noted in the mint, cumin, fennel and coriander which are commonly used. Eating is a national pastime in Spain and especially so in Andalusia; whether its tapas at a bar or a proper sit down meal, you won’t be short of eating establishments in Seville.
